While doctors understood that germs could cause infections, they did not yet realize that a lack of certain substances could be just as deadly. The discovery of vitamins in the early twentieth century fundamentally changed our understanding of health and biology. From Germ Theory to Nutritional Deficiency
The journey toward the discovery of vitamins began with observations of specific diseases like beriberi and scurvy. In the late 1800s, many researchers believed that all diseases were caused by bacteria or toxins. However, a Dutch physician named Christiaan Eijkman noticed something unusual while studying beriberi in the East Indies. He discovered that chickens fed on polished white rice developed the disease, while those fed on unpolished brown rice remained healthy. Although he initially thought a germ was responsible, his work laid the groundwork for the idea that certain foods contain "accessory factors" that are vital for survival.
